Low-Carb Chocolate Mousse

Ingredients:
- 1 cup heavy whipping cream
- 1/4 cup unsweetened cocoa powder
- 1/4 cup erythritol (or other low-carb sweetener)
- 1/4 teaspoon vanilla extract
- Pinch of salt
Instructions:
- Whip the cream: In a chilled bowl, beat the heavy whipping cream until stiff peaks form.
- Combine dry ingredients: In a separate bowl, whisk together the cocoa powder, erythritol, vanilla extract, and salt.
- Fold together: Gently fold the dry ingredients into the whipped cream until well combined.
- Chill: Pour the mousse into individual serving glasses and chill in the refrigerator for at least 2 hours, or overnight.
